  • 4 pork chops, bone-in or boneless, about 1 inch thick
  • 1 cup (165g) fresh mango, peeled and chopped (or thawed frozen mango chunks)
  • 2 tablespoons sriracha sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce (low sodium recommended, or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or avocado oil
  • Salt and pepper, to taste
  • Optional garnishes: chopped fresh cilantro or green onions

Instructions

  1. Prepare the Mango Sriracha Glaze: In a blender, combine mango, sriracha sauce, honey, rice vinegar, soy sauce, and minced garlic. Blend until smooth. Set aside.
  2. Season the Pork Chops: Pat pork chops dry with paper towels. Season both sides generously with salt and pepper. Let rest while heating the pan.
  3. Heat the Skillet: Place a large skillet or cast-iron pan over medium-high heat. Add olive or avocado oil and heat until shimmering but not smoking.
  4. Sear the Pork Chops: Add pork chops to the hot skillet. Sear without moving for 4-5 minutes until golden brown. Flip and sear the other side for another 4-5 minutes until internal temperature reaches 145°F (63°C).
  5. Glaze the Pork Chops: Lower heat to medium-low. Pour mango sriracha glaze over pork chops. Spoon to coat each chop as the sauce thickens and bubbles. Cook for about 5 minutes, turning chops once or twice to build a sticky, caramelized coating.
  6. Rest and Garnish: Remove pork chops to a plate and let rest for 5 minutes. Spoon any extra glaze from the pan over the chops. Garnish with chopped cilantro or green onions if desired.

Notes

If glaze thickens too fast, add a splash of water or rice vinegar to loosen. Avoid overcooking pork chops to keep them tender; use a meat thermometer for best results. Dry pork chops before seasoning for better sear. Blending mango until smooth helps glaze stick better. Rest pork chops after cooking to retain juices.
