  • 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
  • 1 cup button mushrooms or cremini mushrooms, sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1/3 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated or finely chopped
  • 1 cup bell peppers, chopped
  • 1 cup broccoli, chopped
  • 1 cup snap peas
  • 2 tablespoons vegetable oil or avocado oil
  • Optional: green onions, sesame seeds, lime

Instructions

  1. Slice the chicken into thin strips. Clean and slice the mushrooms. Chop your vegetables into bite-sized pieces. Mince the garlic and grate the ginger.
  2. In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 2 tablespoons oyster sauce, 1 tablespoon sesame oil, 1 tablespoon cornstarch, and 1/3 cup chicken broth. Set aside.
  3. Heat 1 tablespoon of oil in your skillet or wok over medium-high heat. Add the chicken and cook for 4-5 minutes, stirring occasionally, until it’s golden brown and cooked through. Remove from the pan and set aside.
  4. Add another tablespoon of oil to the skillet, followed by the mushrooms. Cook for 3-4 minutes until they’re golden and have released their juices. Add the minced garlic and grated ginger and cook for an additional minute, until fragrant.
  5. Toss in your chopped vegetables and stir-fry for 3-5 minutes, or until they’re tender but still crisp.
  6. Return the chicken to the skillet and pour in the sauce. Stir well to coat all the ingredients evenly. Cook for another 2-3 minutes, or until the sauce thickens and glazes the chicken and vegetables.
  7. Remove from heat and garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or noodles.
