Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 1 cup fresh Thai basil leaves, tightly packed
  • 12 bird’s eye chilies, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon fish sauce (optional)
  • 1 teaspoon brown sugar
  • 2 tablespoons vegetable oil
  • 1 ½ cups jasmine rice (uncooked)
  • 2 ¼ cups water
  • 2 green onions, chopped (optional garnish)

Instructions

  1. Rinse 1 ½ cups jasmine rice under cold water until water runs clear. Drain well. Add rice and 2 ¼ cups water to a rice cooker or saucepan. If using saucepan, bring to boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let steam for 10 minutes without lifting lid. Fluff with fork before serving.
  2. While rice cooks, mince garlic, slice bird’s eye chilies (remove seeds for less heat), chop green onions if using, tear Thai basil leaves from stems, and cut chicken thighs into bite-sized pieces.
  3. In a small bowl, combine soy sauce, oyster sauce, fish sauce (optional), and brown sugar. Stir until sugar dissolves and set aside.
  4. Heat wok or large skillet over medium-high heat and add vegetable oil. When oil shimmers and starts to smoke, add minced garlic and sliced chilies. Stir-fry about 20 seconds until fragrant but not burnt.
  5. Add chicken pieces in a single layer. Let sear undisturbed for 1-2 minutes to develop color, then stir-fry for 3-4 minutes until cooked through and no longer pink inside. Avoid overcrowding pan.
  6. Pour sauce mixture over chicken and toss to coat. Immediately add Thai basil leaves and stir just until wilted, about 30 seconds. Basil should remain bright green and fragrant.
  7. Taste and adjust seasoning with extra soy or fish sauce if needed. Remove from heat and sprinkle chopped green onions on top if desired.
  8. Serve the Thai basil chicken hot over jasmine rice.

Notes

Use tamari instead of soy sauce for gluten-free. Substitute tofu for chicken for a vegan option and omit fish sauce. Avoid overcrowding the pan to keep chicken juicy. Add basil last off heat to keep it vibrant. Brown sugar balances flavors perfectly.
