  • Shredded lettuce (1 cup, finely chopped)
  • Diced tomatoes (1 cup, fresh and ripe)
  • Thinly sliced green onions (3-4 stalks)
  • Jalapeño slices (optional)
  • Sour cream (1/2 cup)
  • Salsa or pico de gallo (about 1 cup)
  • Chopped fresh cilantro (a handful, for garnish)
  • Fresh lime wedges (for squeezing over)
  • Optional extras: black beans (1 cup, drained and rinsed), guacamole or sliced avocado (about 1/2 cup), pickled jalapeños or hot sauce

Instructions

  1. Heat a large skillet over medium-high heat. Add 1 pound of ground beef and cook, breaking it apart with a spatula, until browned and no longer pink, about 7-8 minutes. Drain excess fat if needed.
  2. Sprinkle the taco seasoning over the meat, then pour in 1/2 cup water. Stir to combine and reduce heat to medium-low. Let it simmer until the sauce thickens slightly, about 5 minutes. The meat should be moist but not soupy.
  3. While the meat simmers, chop lettuce, dice tomatoes, slice green onions and jalapeños, shred cheese, and prepare any optional extras like black beans or guacamole. Arrange everything in small bowls or on a serving platter for easy access.
  4. Keep individual 1.5 oz bags of Fritos or preferred chips closed until ready to assemble to maintain crispness.
  5. To assemble, cut a small slit or open the chip bag carefully. Spoon in about 1/4 cup of seasoned meat, then layer on cheese, lettuce, tomatoes, and favorite toppings. Finish with a dollop of sour cream and a squeeze of fresh lime juice.
