A quick and easy baked oats recipe that captures the classic cinnamon roll flavor with a soft, fluffy texture and a cinnamon-sugar swirl. Perfect for cozy mornings and a wholesome breakfast treat.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup (240ml) milk (any kind)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 2 tablespoons butter, melted (plus extra for cinnamon swirl)
  • 2 tablespoons brown sugar
  • Optional: chopped nuts (pecans or walnuts)
  • Optional: raisins or dried cranberries
  • Optional: Greek yogurt or mashed banana (can replace egg for vegan twist)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch (20×20 cm) baking dish with butter or non-stick spray.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and salt. Whisk together until evenly blended.
  3. In a separate bowl, beat the egg until smooth. Add milk, maple syrup, vanilla extract, and melted butter. Whisk until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.
  5. In a small bowl, mix brown sugar, cinnamon, and melted butter until it forms a sticky paste.
  6. Pour the batter into the prepared baking dish and spread evenly. Dollop the cinnamon sugar mixture over the top in small blobs. Using a butter knife or skewer, gently swirl the cinnamon mixture through the batter to create ribbons.
  7. Bake for 25-30 minutes until the top is golden brown and a toothpick inserted in the center comes out mostly clean.
  8. Let cool for 5 minutes before slicing and serving.

Notes

Use rolled oats, not instant, for best texture. Swirl cinnamon sugar gently to keep visible ribbons. Watch baking time closely to avoid overbaking. Let cool before slicing for cleaner cuts. For vegan version, replace egg with 1/4 cup applesauce or mashed banana and use plant-based milk and vegan butter. Nuts or dried fruit can be added after mixing wet and dry ingredients. Broil for 1-2 minutes at the end for a crispy top, watching carefully to prevent burning.
