These fluffy cinnamon sugar donut muffins are a nostalgic, quick, and easy treat topped with a sweet butter glaze and cinnamon sugar coating, perfect for breakfast or any occasion.

  • 1/2 cup (100g) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup (240ml) buttermilk (or milk + 1 tbsp vinegar)
  • 2 large eggs, room temperature
  • 1/4 cup (60ml) unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1/2 cup (100g) granulated sugar (for cinnamon sugar coating)
  • 1 tablespoon ground cinnamon (for cinnamon sugar coating)
  • 1/4 cup (56g) unsalted butter (for butter glaze)
  • 1 cup (120g) powdered sugar, sifted (for butter glaze)
  • 12 tablespoons milk or cream (for butter glaze)
  • 1/2 teaspoon vanilla extract (for butter glaze)

Instructions

  1. Preheat oven to 375°F (190°C). Grease muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined; batter should be slightly lumpy.
  5. Spoon batter evenly into muffin cups, filling about 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. While muffins bake, mix granulated sugar and cinnamon in a shallow bowl for coating.
  8. In a small saucepan, melt butter over low heat. Remove from heat and whisk in powdered sugar, vanilla, and milk until smooth and pourable.
  9. Once muffins are out of the oven and slightly cooled (about 5 minutes), dip tops in butter glaze then immediately coat with cinnamon sugar mixture.
  10. Place muffins on a cooling rack and let glaze set for about 15 minutes before serving.

Notes

Do not overmix the batter to keep muffins tender and fluffy. Use room temperature eggs and buttermilk for best results. Dip warm muffins in glaze for better sugar adherence. If glaze thickens, add a splash of milk to thin it out.
