  • 1 cup warm milk (dairy or unsweetened almond milk)
  • 1/4 cup plain yogurt (dairy or dairy-free)
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Grease a 9-inch round cake pan or oven-safe skillet with butter or cooking spray.
  2. In a large mixing bowl, whisk together gluten-free flour, instant yeast, sugar, salt, and xanthan gum (if needed).
  3. In a separate bowl, beat eggs, then add warm milk and plain yogurt. Mix until smooth. Stir in melted butter.
  4. Pour wet mixture into dry ingredients and stir with a wooden spoon or silicone spatula until a thick, sticky dough forms. Add more milk by tablespoon if dough seems dry.
  5. Using oiled hands or a cookie scoop, divide dough into 8 equal pieces. Shape each into a ball and place close together in the prepared pan.
  6. Cover pan loosely with a clean towel and let rolls rise in a warm spot for about 15 minutes.
  7. While rolls rise, melt butter in a small pan and add minced garlic. Sauté on low heat for 2 minutes until fragrant, then remove from heat. Stir in black pepper.
  8. Preheat oven to 375°F (190°C). Brush garlic butter over rolls. Sprinkle Parmesan cheese and parsley evenly on top.
  9. Bake for 18-22 minutes or until golden brown and set. Tops should be nicely browned.
  10. Remove from oven and let rolls cool for 5 minutes in the pan.
