  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 6 cups beef broth
  • 1/2 cup dry white wine (optional)
  • 3 sprigs fresh thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • 8 slices baguette, about 1/2-inch thick
  • 2 cups grated Gruyere cheese

Instructions

  1. Slice the onions thinly, about 1/8-inch thick (10 minutes).
  2. Heat the butter and olive oil in a large heavy-bottomed pot or Dutch oven over medium-low heat until melted and shimmering.
  3. Add the onions and stir to coat well. Cook slowly, stirring every 5 minutes, for about 40 minutes until onions are deeply caramelized and golden brown. Lower heat if onions start to stick or brown too fast.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Pour in the white wine and let it simmer until reduced by half, about 5 minutes.
  6. Add beef broth, thyme sprigs, and bay leaf. Bring to a gentle simmer, season with salt and pepper, and cook uncovered for 20 minutes to meld flavors.
  7. While the soup simmers, toast the baguette slices lightly in the oven or toaster until just crisp but not browned.
  8. Ladle the soup into oven-safe bowls, place toasted baguette slices on top, and cover generously with grated Gruyere cheese.
  9. Broil the bowls under the broiler for 2-4 minutes, watching carefully until the cheese bubbles and turns golden brown.
  10. Serve immediately, optionally garnished with fresh thyme.
