Ingredients

  • Mini mozzarella balls (bocconcini or ciliegine), about 8 oz
  • Cherry or grape tomatoes, about 1 cup
  • Fresh basil leaves, about 1/4 cup
  • Balsamic glaze or reduction, for drizzling
  • Extra virgin olive oil, for drizzling
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Wooden skewers or toothpicks, small-sized

Instructions

  1. Rinse the cherry tomatoes and basil leaves under cold water and pat dry.
  2. Drain the mini mozzarella balls from their liquid and gently pat dry with a paper towel to avoid sogginess.
  3. Take a skewer and thread one cherry tomato first, followed by a fresh basil leaf folded in half, then a mini mozzarella ball. Repeat if skewers are longer or keep at three pieces for bite-sized portions.
  4. Arrange the skewers on a serving plate or pack them into a bento box.
