A vibrant, zesty salad combining black-eyed peas, fresh veggies, and a tangy lime dressing, perfect for summer parties and potlucks.

Ingredients

  • 1½ cups (255 grams) black-eyed peas, canned or cooked (low sodium recommended)
  • 1 cup (150 grams) fresh cherry tomatoes, halved
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • ¼ cup (40 grams) red onion, finely chopped
  • ¼ cup (15 grams) fresh cilantro, chopped
  • Juice of 2 fresh limes
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • ½ teaspoon ground cumin
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 small jalapeño, seeded and finely chopped (optional)

Instructions

  1. If using canned black-eyed peas, drain and rinse them under cold water in a fine mesh strainer. Set aside to drain well (about 5 minutes).
  2. Dice the red and green bell peppers into small, bite-sized pieces (about ¼ inch). Halve the cherry tomatoes and finely chop the red onion and cilantro. If using jalapeño, remove seeds and finely chop it.
  3. In a small bowl, whisk together the fresh lime juice, olive oil, apple cider vinegar, minced garlic, ground cumin, salt, and black pepper. Taste and adjust seasoning as needed.
  4. In a large mixing bowl, combine the black-eyed peas, chopped bell peppers, cherry tomatoes, red onion, cilantro, and jalapeño if using.
  5. Pour the dressing over the salad and gently toss everything together with a wooden spoon or spatula to coat evenly without bruising the veggies.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.
  7. Before serving, gently stir the salad and adjust seasoning if needed.

Notes

Rinse canned black-eyed peas to remove excess sodium and canned taste. Chill the salad for at least 30 minutes or overnight for best flavor. Use fresh, crisp vegetables for optimal texture. Adjust jalapeño amount gradually to control heat. This salad can be made a day ahead and tastes better after resting.
