  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons red onion, finely diced (optional)

Instructions

  1. Wash and dry the cucumbers thoroughly. Slice them thinly, about 1/8 inch thick. Use a salad spinner to remove excess water if available.
  2. In a bowl, whisk together Greek yogurt, fresh lemon juice, minced garlic, olive oil, salt, and black pepper until smooth and creamy.
  3. Finely chop the fresh dill and dice the red onion.
  4. Gently fold the cucumber slices, dill, and onion into the dressing. Toss carefully to coat evenly without breaking the cucumbers.
  5. Cover and refrigerate for at least 20 minutes to chill and marinate.
  6. Before serving, taste and adjust seasoning with more salt or lemon juice if desired.
