Fresh Frozen Yogurt Bark with Berries and Granola Crunch

A quick and easy frozen yogurt bark featuring creamy Greek yogurt, mixed berries, and crunchy granola, perfect for a refreshing summer snack.

  • 2 cups (480 ml) plain Greek yogurt
  • 1 cup (150 grams) mixed berries (blueberries, raspberries, strawberries, blackberries)
  • 1/2 cup (50 grams) granola
  • 2 tablespoons (30 ml) honey or maple syrup (optional)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 teaspoon lemon zest (optional)

Instructions

  1. In a mixing bowl, combine 2 cups plain Greek yogurt with 1 teaspoon vanilla extract and 2 tablespoons honey or maple syrup if using. Stir until smooth and well blended. Add 1 teaspoon lemon zest if desired.
  2. Line a rimmed baking sheet (about 9×13 inches) with parchment paper or a silicone baking mat.
  3. Pour the yogurt mixture onto the lined baking sheet and spread evenly to about 1/4-inch thickness.
  4. Scatter 1 cup mixed berries evenly over the yogurt, pressing gently so they stick but don’t sink.
  5. Sprinkle 1/2 cup granola evenly over the berries.
  6. Freeze the tray for at least 3 hours or preferably overnight until the yogurt is completely solid.
  7. Remove from freezer, lift the bark out using the parchment paper, and break into bite-sized pieces. Serve immediately or store.

Notes

Use thick Greek yogurt for best creamy texture. Press berries gently into yogurt to keep them in place. Sprinkle granola just before freezing to maintain crunch. Freeze overnight for best texture. Let bark sit at room temperature a few minutes before breaking if too hard. For dairy-free, use coconut or almond milk yogurt and maple syrup instead of honey. Use gluten-free granola or nuts/seeds for gluten-free version.
