A quick, no-cook wholesome meal combining fluffy quinoa, crisp cucumber, tangy feta, and fresh veggies for a refreshing Mediterranean-inspired bowl.

  • 1 cup cooked quinoa (about 185g), cooled
  • 1 large English cucumber, diced
  • 3/4 cup crumbled feta cheese (about 120g)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup finely chopped red onion
  • 1/3 cup pitted and sliced Kalamata olives
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes
  • Optional: handful of chopped fresh mint

Instructions

  1. Cook the quinoa: Rinse 1/2 cup (92g) dry quinoa under cold water. Add to a saucepan with 1 cup (240ml) water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and let cool completely (about 20 minutes).
  2. Prep the vegetables: Dice cucumber, halve cherry tomatoes, finely chop red onion, slice Kalamata olives, and chop parsley and optional herbs like mint.
  3. Make the dressing: Whisk together lemon juice, olive oil, dried oregano, salt, and pepper in a small bowl. Adjust seasoning to taste.
  4. Combine ingredients: In a large mixing bowl, add cooled quinoa, cucumber, tomatoes, red onion, olives, parsley, and crumbled feta cheese. Pour dressing over the top.
  5. Toss gently: Use a spoon or spatula to toss everything until evenly coated, being careful not to mash the feta.
  6. Chill or serve: Serve immediately or chill in the fridge for 15-30 minutes to let flavors meld.

Notes

Rinse quinoa thoroughly to remove bitterness. Let quinoa cool completely before mixing to prevent feta from melting and cucumbers from becoming soggy. Use quality olive oil for best flavor. To keep cucumbers crisp, sprinkle with salt and drain if watery. Store cucumbers separately if making ahead.
