  • 6 cups mixed greens (baby spinach, arugula, butter lettuce)
  • 1 cup cucumber, thinly sliced
  • 1 ripe avocado, diced
  • 1/2 cup snap peas, trimmed and halved
  • 1/4 cup radishes, thinly sliced (optional)
  • 1/4 cup fresh green onions, sliced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise (light or vegan mayo optional)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh tarragon leaves, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Rinse mixed greens thoroughly under cold water. Use a salad spinner to dry or pat dry with a clean towel. (5 minutes)
  2. Thinly slice cucumber, radishes, and green onions. Dice avocado into bite-sized cubes. Trim and halve snap peas. Finely chop parsley, tarragon, and chives. (10 minutes)
  3. In a medium bowl, whisk together Greek yogurt, mayonnaise, lemon juice, and white wine vinegar until smooth. Add minced garlic, chopped herbs, salt, and pepper. Adjust seasoning to taste. (5 minutes)
  4. In a large salad bowl, combine greens, cucumber, snap peas, radishes, and green onions. Drizzle about half the dressing over the salad and toss gently. Add diced avocado last to avoid mashing. (3 minutes)
  5. Serve immediately, drizzling remaining dressing on top or serving on the side. Garnish with fresh herbs if desired. (2 minutes)

Notes

For dairy-free, use coconut yogurt and vegan mayo. Add olive oil for richness. Add avocado last to prevent browning. Toss dressing and salad just before serving to keep greens crisp. Thin dressing with water or milk if too thick. Fresh herbs can be substituted with basil or dill if tarragon is unavailable.
