Ingredients

  • Classic hummus (about 1 cup)
  • Roasted red pepper hummus (about 1 cup)
  • Tzatziki or creamy cucumber dip (about 1 cup) – can substitute with blue cheese dip
  • Red bell peppers, sliced into strips (1 large)
  • Mini cucumbers or Persian cucumbers, sliced (2 medium)
  • Cherry tomatoes, halved (1 cup)
  • Celery sticks (2-3 stalks)
  • Blue corn tortilla chips or pita chips (optional)
  • Fresh parsley or dill, chopped (1-2 tablespoons, optional)
  • Olive oil drizzle (1 tablespoon, optional)
  • Paprika sprinkle (1 teaspoon, optional)

Instructions

  1. Rinse all your veggies well. Slice the red bell peppers into strips about 3-4 inches long and 1/2 inch wide. Slice the mini cucumbers into thin rounds or lengthwise strips if preferred. Halve the cherry tomatoes and cut celery into sticks about 3 inches long. Set aside on a platter or paper towel to dry excess moisture.
  2. Spread the classic hummus evenly on the bottom of your serving dish, creating a smooth, flat layer about 1/2 inch thick. Use the back of a spoon or spatula to smooth it out. If hummus is too thick, stir in a teaspoon of olive oil to loosen it slightly.
  3. Carefully spread the roasted red pepper hummus on top of the classic layer, about the same thickness. Keep the edges neat for a clean look.
  4. Spread the tzatziki or creamy cucumber dip evenly over the roasted red pepper hummus layer to complete the patriotic theme.
  5. Drizzle the top with a tablespoon of olive oil, sprinkle paprika evenly, and scatter chopped parsley or dill to garnish (optional but recommended).
  6. Arrange the crisp vegetable sticks and cherry tomatoes around the dip or on a separate platter. Include blue corn tortilla chips or pita chips on the side for extra crunch.
  7. Serve immediately or refrigerate covered for up to 4 hours before serving. Bring to room temperature for about 10 minutes before serving.
