  • 1 small clove garlic, minced
  • Pinch of kosher salt
  • Freshly ground black pepper, to taste
  • Balsamic glaze or reduction (optional, for drizzling)

Instructions

  1. Prepare the basil drizzle: Place 1 cup of fresh basil leaves, 3 tablespoons olive oil, minced garlic, a pinch of salt, and pepper into a blender or food processor. Blend until smooth and vibrant green, about 30 seconds. Set aside.
  2. Slice the peaches: Rinse peaches and pat dry. Cut into 1/2-inch thick wedges, removing the pit. Choose peaches that are firm but fragrant.
  3. Prepare the mozzarella: Drain the fresh mozzarella balls well to avoid excess moisture. If using a mozzarella log, cut into bite-sized pieces roughly matching the peach wedges in size.
  4. Assemble the skewers: Thread one peach wedge, one mozzarella ball, and one basil leaf onto each skewer. One set per skewer is perfect for snacking size.
  5. Arrange on serving platter: Lay the skewers neatly on a tray or plate. Optionally, brush peaches lightly with olive oil for glossiness.
  6. Drizzle with basil sauce: Spoon or drizzle the prepared basil sauce generously over the skewers just before serving. Optionally, add a drizzle of balsamic glaze for tangy sweetness.
  7. Final touch: Sprinkle a pinch of flaky sea salt and freshly ground black pepper over the skewers before serving.

Choose peaches that are firm but fragrant to avoid mushy skewers. Drain mozzarella well to prevent sogginess. Make basil drizzle fresh for best flavor and color.
