  • 2 medium oranges, peeled and segmented
  • 2 large apples, cored and diced
  • 1 cup pomegranate seeds
  • 2 kiwis, peeled and sliced
  • 1 cup red grapes, halved
  • 1/2 cup chopped pecans (optional)
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Juice of 1/2 orange (about 2 tablespoons)

Instructions

  1. Wash all the fruits thoroughly.
  2. Peel the oranges and separate them into segments.
  3. Peel and slice the kiwis into bite-sized pieces.
  4. Core and dice the apples into cubes, and sprinkle a tiny bit of lemon juice on them to prevent browning.
  5. Halve the grapes and remove the seeds from the pomegranate.
  6. In a small bowl, whisk together the honey, vanilla extract, cinnamon, and orange juice. Adjust sweetness or spice to taste.
  7. In a large mixing bowl, gently toss together the oranges, apples, pomegranate seeds, kiwis, and grapes. Add pecans if desired.
  8. Pour the cinnamon vanilla dressing over the fruit salad and gently toss to coat the fruits evenly.
  9. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes.
  10. Give the fruit salad one last gentle toss before serving.
