  • 2 medium fresh kiwis, peeled and chopped
  • 1 cup baby spinach, packed
  • 1012 fresh mint leaves
  • 1 cup (240 ml) coconut water
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon chia seeds (optional)
  • 1 cup ice cubes

Instructions

  1. Peel and chop 2 medium kiwis into chunks. Rinse 1 cup of baby spinach and pat dry. Pluck 10-12 fresh mint leaves, discarding thick stems. Juice 2 fresh lemons to get about 2 tablespoons of juice.
  2. Place the kiwi chunks, spinach, mint leaves, and 1 cup (240 ml) of coconut water into your blender jar.
  3. Add 1 tablespoon of honey or maple syrup if desired. Toss in 1 tablespoon of chia seeds if using.
  4. Add 1 cup of ice cubes for a chilled, refreshing texture.
  5. Blend on low speed, then ramp up to high for about 1-2 minutes until smooth and vibrant green with no leafy bits visible.
  6. Check consistency and adjust by adding more coconut water if too thick, or extra kiwi or ice cubes if too thin.
  7. Taste and adjust sweetness or lemon juice as needed.
  8. Serve immediately, garnished with a sprig of mint or a thin kiwi slice if desired.

Notes

Use ripe kiwis for natural sweetness to reduce added sweeteners. Blend mint leaves last for milder flavor or first for a bolder mint punch. Adjust ice quantity gradually to avoid watering down the smoothie. Store in an airtight container in the fridge up to 24 hours and stir before drinking. Avoid reheating.
