These fun crispy Frankenstein Rice Krispie treat pops combine classic crispy marshmallow treats with playful Halloween decorations, perfect for kids and adults alike. Easy to make and decorate, they bring a festive and nostalgic touch to any Halloween party.

  • 6 cups Rice Krispies cereal (or any crispy rice cereal you prefer)
  • 4 cups mini marshmallows (about 10 oz) – Jet-Puffed recommended
  • 3 tablespoons unsalted butter (softened)
  • Green food coloring (gel or liquid) – a few drops
  • Black decorating gel or melted dark chocolate (for stitches and hairline)
  • Mini candy eyes
  • Black licorice strings or thin fruit leather strips (for hair bolts)
  • Optional: edible silver pearls or sprinkles (for extra spooky detail)

Instructions

  1. Line a 9×13 inch baking pan with parchment paper or lightly grease it with butter or non-stick spray.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter.
  3. Add 4 cups of mini marshmallows and stir constantly until completely melted and smooth.
  4. Remove from heat and quickly stir in a few drops of green food coloring until evenly colored.
  5. Immediately add 6 cups of Rice Krispies cereal and stir gently but thoroughly to coat every crisp.
  6. Transfer the mixture into the prepared pan and press firmly and evenly using a buttered spatula or wax paper.
  7. Let the treats cool at room temperature for about 30 minutes or until firm enough to cut.
  8. Cut into rectangles or squares roughly 2×3 inches.
  9. Insert a popsicle stick or lollipop stick halfway into each treat gently.
  10. Decorate each pop with black decorating gel or melted dark chocolate to draw hairline and stitches.
  11. Press mini candy eyes into the marshmallow surface while still slightly sticky.
  12. Add black licorice strings or fruit leather strips as bolts on the sides of the head.
  13. Allow decorated pops to rest for 10-15 minutes so decorations set before serving.

Notes

Melt butter and marshmallows gently over low heat to avoid burning. Use a silicone spatula for easy mixing. Press mixture firmly but not too much to keep treats light and crispy. Work quickly when adding decorations as marshmallow sets fast. Warm knife in hot water for cleaner cuts. Store pops in airtight container at room temperature for up to 3 days or freeze wrapped individually for up to 2 weeks.
