These glazed carrots with honey and butter are a quick and easy side dish, perfect for weeknight dinners or holiday feasts. The natural sweetness of carrots paired with a rich buttery glaze makes every bite irresistible.

Ingredients

Scale
  • 1 pound carrots, peeled and cut into sticks or slices
  • 3 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1 tablespoon brown sugar (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Peel the carrots and cut them into sticks or diagonal slices, about 1/4-inch thick.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat. Add the carrots and sauté for 5-7 minutes, stirring occasionally, until they start to soften.
  3. Lower the heat to medium-low and stir in the honey, brown sugar, salt, and pepper. Cook for another 3-5 minutes, stirring frequently, until the carrots are evenly coated and the glaze starts to thicken.
  4. Add the remaining tablespoon of butter to the skillet. Stir until the butter melts and the carrots are glossy.
  5. Taste a piece to ensure the carrots are tender but still have a slight bite. If needed, cook for 1-2 minutes longer.
  6. Transfer the carrots to a serving dish and sprinkle with fresh parsley for a pop of color.

Notes

[‘If you’re out of honey, maple syrup works beautifully as a substitute.’, ‘You can skip the brown sugar for a lighter sweetness.’, ‘For a fun twist, try adding a pinch of cinnamon or nutmeg to bring out warm, earthy undertones.’, ‘If your carrots aren’t glazing properly, lower the heat and give the sugar and honey time to caramelize.’]
