  • 24 large strawberries, stems removed
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1/2 cup heavy whipping cream
  • 12 oz white chocolate or candy melts
  • Candy eyes
  • Black gel icing or melted dark chocolate (for ghost mouths)

Instructions

  1. Wash and dry strawberries. Remove stems and gently hollow out the center (about 1/2 inch deep). Pat dry.
  2. In a mixing bowl, beat softened cream cheese with powdered sugar until smooth and creamy (about 2 minutes). Add vanilla extract and mix until combined.
  3. In a separate bowl, whip heavy cream until stiff peaks form (2–3 minutes). Fold whipped cream into the cream cheese mixture until fluffy.
  4. Spoon cheesecake filling into a piping bag or zip-top bag. Pipe filling into hollowed strawberries, filling each generously. Place filled strawberries on a parchment-lined baking sheet.
  5. Melt white chocolate or candy melts in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth (about 2 minutes), or use a double boiler.
  6. Using a toothpick or fork, dip each filled strawberry into melted white chocolate, covering the top and sides. Set dipped strawberries back on parchment.
  7. Quickly add candy eyes before chocolate sets. Use black gel icing or melted dark chocolate to draw ghost mouths.
  8. Chill in the fridge for at least 20 minutes, until chocolate is firm and ghosts are set. Alternatively, freeze for 10 minutes.
  9. Once set, transfer to serving platter. Trim any excess chocolate at the base if needed.

Notes

Dry strawberries thoroughly before dipping to ensure chocolate sticks. Use room temperature cream cheese for a smooth filling. Work quickly when dipping and decorating, as white chocolate sets fast. For dairy-free or vegan options, substitute coconut cream and vegan cream cheese, and use vegan white chocolate. Store in the fridge for up to 3 days or freeze for longer storage.
