These homemade juicy gushers fruit snacks are a quick and easy treat with a chewy texture and a burst of real fruit flavor, perfect for kids and nostalgic snack lovers.

  • 1 cup (240 ml) 100% fruit juice (grape, strawberry, mixed berry, or other)
  • 3 tablespoons (30 g) unflavored gelatin powder
  • 2 tablespoons (30 ml) honey or maple syrup
  • 1 tablespoon (15 ml) lemon juice
  • Optional: food coloring or natural beet juice

Instructions

  1. Lightly grease your silicone mold or ice cube tray with a neutral oil to prevent sticking. Set aside.
  2. In a small bowl, sprinkle the 3 tablespoons of unflavored gelatin over ½ cup (120 ml) of room-temperature fruit juice. Let it sit for 5 minutes until it absorbs the liquid and thickens.
  3. In a small saucepan, warm the remaining ½ cup (120 ml) of fruit juice over low heat. Do not boil. Once warm, stir in the honey or maple syrup and lemon juice.
  4. Add the bloomed gelatin mixture to the warm juice in the saucepan. Whisk gently until the gelatin fully dissolves, about 2-3 minutes. The mixture should be smooth and slightly thickened but not clumpy.
  5. If desired, add a few drops of food coloring or natural beet juice to get those classic vibrant gushers colors.
  6. Carefully pour the mixture into your prepared molds. Fill each cavity just below the rim. Work quickly before the gelatin starts setting.
  7. Place the mold in the refrigerator and chill for at least 2 hours, or until the snacks are fully set and firm to the touch.
  8. Once set, gently pop out the homemade juicy gushers fruit snacks. Store them in an airtight container in the refrigerator.

Notes

Do not boil the juice mixture to preserve gelatin’s setting power. Bloom gelatin properly for smooth texture. Use silicone molds for easy removal. Store snacks in an airtight container in the fridge for up to 1 week or freeze for up to 3 months. For vegan version, substitute gelatin with agar-agar powder but expect a slightly different texture.
