  • 3 ripe bananas, mashed
  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) brown sugar, packed
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional)
  • ½ cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your mini muffin pan well with butter or non-stick spray to avoid sticking.
  2. In a medium bowl, mash the ripe bananas until mostly smooth with a few small lumps remaining.
  3. Add melted butter, granulated sugar, brown sugar, eggs, and vanilla extract to the mashed bananas. Whisk until combined and slightly creamy.
  4. In a large bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  5. Pour the wet banana mixture into the dry ingredients. Gently fold using a spatula until just combined. Do not overmix.
  6. Fold in optional walnuts or chocolate chips if using.
  7. Spoon batter into mini muffin cups, filling each about ¾ full (makes about 24 mini muffins).
  8. Bake on the middle rack for 18–22 minutes. Check at 18 minutes with a toothpick; it should come out clean or with a few crumbs.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely before storing or serving.

Use ripe bananas for best sweetness and moisture. Avoid overmixing batter to keep muffins tender. Grease muffin pan thoroughly or use paper liners to prevent sticking. Cool muffins completely before storing to avoid sogginess. Muffins can be frozen wrapped individually for up to 2-3 months.
