Ingredients

Scale
  • 4 salmon fillets (about 56 oz each, skin-on or skinless)
  • Salt and black pepper, to taste
  • 1/2 cup pineapple juice (fresh or canned)
  • 1/3 cup honey (runny honey preferred)
  • 2 tablespoons low-sodium soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger (optional)
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon olive oil (or avocado oil)
  • Pineapple chunks (fresh or canned, for serving, optional)
  • Chopped cilantro or green onions (for garnish, optional)
  • Sesame seeds (for garnish, optional)
  • Lime wedges (for serving, optional)

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.
  2. In a small bowl, whisk together pineapple juice, honey, soy sauce, lemon juice, minced garlic, and ginger. Add red pepper flakes if using. If using pineapple chunks instead of juice, blend them until smooth with the other glaze ingredients.
  3. Heat olive oil in a large skillet over medium-high heat. When hot, place the salmon fillets skin-side down (if using skin-on). Sear for 3-4 minutes until the skin is crisp and the bottom is golden.
  4. Carefully flip the salmon with a spatula. Pour half the honey pineapple glaze over the fillets. Let cook another 2-3 minutes.
  5. Optional: Transfer the skillet to your oven broiler (if oven-safe) and broil for 2-3 minutes, basting once with more glaze, until the top bubbles and caramelizes.
  6. While the salmon broils, pour the remaining glaze into a small saucepan. Simmer over medium heat for 2-4 minutes until thickened slightly.
  7. Plate salmon, spoon extra glaze over the top, and garnish with pineapple chunks, cilantro, sesame seeds, and lime wedges. Serve immediately.

Notes

For a gluten-free version, use tamari or coconut aminos instead of soy sauce. Watch the glaze closely as it can burn quickly due to the sugars. Broiling is optional but adds a beautiful caramelized finish. The glaze can be made up to 3 days ahead. Serve with rice, steamed veggies, or pineapple salsa for a complete meal.
