  • 1/2 cup (120ml) honey (raw honey works best for flavor!)
  • 1/2 cup (100g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • Optional: Powdered sugar for a light dusting
  • Optional: Chopped pecans for added crunch
  • Optional: Drizzle of honey for extra sweetness

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter and brown sugar together until creamy and well combined. Add the honey, pumpkin puree, egg, and vanilla extract. Mix until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix—the dough should be soft and slightly sticky.
  5. Use a tablespoon or cookie scoop to drop rounded spoonfuls of dough onto the prepared baking sheets, leaving about 2 inches (5cm) between each cookie.
  6. Place the cookies in the oven and bake for 12-14 minutes, or until the edges are lightly golden and the centers are set.
  7. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 20-30 minutes if it seems too sticky. Use fresh pumpkin puree and spices for the best flavor. Avoid overmixing to maintain a soft texture.
