A quick and easy recipe featuring chicken drumsticks glazed with a sticky, sweet, and spicy honey sriracha sauce that caramelizes perfectly in the oven for a crowd-pleasing dinner.

Ingredients

Scale
  • 2 pounds chicken drumsticks (skin-on, bone-in)
  • 1/4 cup honey (85 grams)
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Optional: 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken drumsticks dry with paper towels to remove excess moisture.
  3. Optional: Toss the drumsticks in 1 tablespoon cornstarch for extra crunch and shake off excess.
  4. In a mixing bowl, combine honey, sriracha, soy sauce, minced garlic, and olive oil. Whisk until smooth and glossy.
  5. Add the chicken to the bowl and toss to evenly coat each piece with the glaze.
  6. Arrange the drumsticks on a wire rack set over a baking sheet or directly on a lined baking sheet, spacing them out for air circulation.
  7. Bake for 35-40 minutes, flipping halfway through and basting with leftover glaze. Chicken is done when skin is caramelized and internal temperature reaches 165°F (74°C).
  8. Let the drumsticks rest for 5 minutes before serving to allow juices to redistribute and glaze to set.

Notes

Pat chicken dry for crispy skin. Flip and baste halfway through baking for even caramelization. Use a wire rack for crispier skin. Tent with foil if glaze browns too quickly. Rest chicken before serving. Adjust sriracha for desired heat level. Cornstarch toss optional for extra crunch. Can grill after baking for smoky flavor.
