  • 1 cup (100g) rolled oats
  • 1/2 cup (75g) finely diced apple (peeled)
  • 1/4 cup (30g) all-purpose flour (for streusel topping)
  • 1/4 cup (50g) light brown sugar (for streusel topping)
  • 1/4 teaspoon ground cinnamon (for streusel topping)
  • 2 tablespoons (30g) unsalted butter, melted (for streusel topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract. Beat until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the rolled oats and diced apple, ensuring they’re evenly distributed throughout the dough.
  6. In a small bowl, combine the flour, brown sugar, and cinnamon for the streusel topping. Pour in the melted butter and mix until crumbly.
  7. Scoop the cookie dough into balls using a cookie scoop or a tablespoon and place them onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Top each cookie with a generous sprinkle of the streusel mixture, pressing lightly to help it adhere.
  9. Bake the cookies in the preheated oven for 12-15 minutes or until the edges are golden. Rotate the baking sheets halfway through for even baking.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack.
