  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (120ml) unsalted butter, melted and cooled
  • 1 cup (240ml) buttermilk
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups (200g) fresh or frozen cherries, pitted and halved
  • 1/4 cup (50g) granulated sugar (streusel topping)
  • 1/4 cup (50g) brown sugar (streusel topping)
  • 1/2 cup (60g) all-purpose flour (streusel topping)
  • 1/4 cup (60g) unsalted butter, cold and cubed (streusel topping)
  • 1/2 tsp cinnamon (optional, streusel topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and line your muffin tin with paper liners.
  2. In a medium bowl, combine the granulated sugar, brown sugar, flour, and cinnamon for the streusel. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs. Set aside.
  3. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk the melted butter, buttermilk, eggs, and vanilla extract until smooth.
  5. Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
  6. Fold in the cherries, ensuring they’re evenly distributed throughout the batter.
  7. Use an ice cream scoop or spoon to fill each muffin cup about 3/4 full with batter.
  8. Sprinkle a generous amount of streusel over each muffin.
  9. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the muffins cool in the tin for 5 minutes, then transfer them to a cooling rack.
