  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the onion and garlic, cooking until softened (about 3-4 minutes).
  3. Stir in the flour and cook for another minute, then slowly whisk in the chicken broth and cream until smooth.
  4. Stir in the shredded chicken, frozen veggies, thyme, salt, and pepper. Cook for 5-7 minutes, until the mixture thickens slightly. Transfer the filling to a greased 9×13-inch baking dish.
  5. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the melted butter and milk, stirring until just combined.
  6. Spoon dollops of the cobbler topping evenly over the chicken filling.
  7. Bake the casserole in the preheated oven for 30-35 minutes, or until the topping is golden brown and cooked through.
  8. Let the casserole rest for 5-10 minutes before serving.
