Irresistible Crockpot French Dip Sandwiches

Tender beef slow-cooked to perfection, served on crusty rolls with melted cheese and a rich au jus for dipping. A crowd-pleasing comfort food that’s effortless to make.

Ingredients

  • 34 lb chuck roast (boneless, well-marbled for tenderness)
  • 2 cups beef broth (low sodium preferred)
  • 1 cup water
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 medium onion, sliced
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon black pepper
  • 1 bay leaf
  • 68 hoagie rolls or French rolls (crusty is best!)
  • 8 slices provolone cheese (or your favorite melty cheese)

Instructions

  1. Slice the onion thinly, mince the garlic, and gather your herbs and spices.
  2. Sprinkle the chuck roast with black pepper. You don’t need to add salt now since the soy sauce and broth provide plenty.
  3. Add the sliced onion, minced garlic, thyme, rosemary, and bay leaf to the crockpot. Pour in beef broth, water, soy sauce, and Worcestershire sauce.
  4. Place the seasoned chuck roast on top of the onion mixture. Spoon some liquid over the beef.
  5. Cover the crockpot and cook on low for 8 hours or high for 4-5 hours. The beef should be fall-apart tender.
  6. Remove the beef from the crockpot and use two forks to shred it into bite-sized pieces. Return the shredded beef to the crockpot to soak in the juices.
  7. Preheat your oven to 375°F. Split the hoagie rolls and place them on a baking sheet. Toast for 3-5 minutes until slightly crispy.
  8. Pile the shredded beef onto the toasted rolls. Top with provolone cheese and return to the oven for 2-3 minutes to melt the cheese.
  9. Strain the cooking liquid (optional) and serve warm in small bowls for dipping.
