  • 2 tablespoons sugar

  • Tempura shrimp
  • Nori (seaweed sheets)
  • 1 avocado, sliced thinly
  • Imitation crab, shredded
  • Cucumber, julienned
  • Eel sauce
  • Sesame seeds (optional)
  • Wasabi
  • Pickled ginger

Instructions

  1. Cook 2 cups of sushi rice according to package instructions. Transfer to a mixing bowl and season with 1/3 cup rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt. Let cool to room temperature.
  2. Coat shrimp in tempura batter and fry until golden and crispy. Set aside on paper towels to drain excess oil.
  3. Slice avocado thinly, julienne the cucumber, and shred the imitation crab. Keep everything within reach for easy assembly.
  4. Lay a bamboo sushi mat on the counter and cover it with plastic wrap to prevent sticking. Place a sheet of nori shiny side down on the mat.
  5. Wet your fingers and gently spread a thin layer of sushi rice over the nori, leaving about 1 inch of space at the top edge.
  6. Arrange tempura shrimp, cucumber, and imitation crab horizontally across the center of the rice.
  7. Use your bamboo mat to carefully roll the nori over the fillings, applying gentle pressure to form a tight roll. Seal the edge with a little water.
  8. Arrange thin avocado slices diagonally across the top of the roll to resemble dragon scales.
  9. Use a sharp knife to cut the roll into 8 pieces. Drizzle eel sauce over the top and sprinkle with sesame seeds.
  10. Plate your dragon rolls with wasabi, pickled ginger, and soy sauce for dipping.
