A beginner-friendly recipe for rustic Italian bread that’s golden on the outside, soft on the inside, and bursting with authentic flavor.

Ingredients

Scale
  • 4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water (110°F / 43°C)
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons salt
  • 2 tablespoons olive oil
  • Optional: Cornmeal for dusting

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water (110°F / 43°C) with the sugar and yeast. Let it sit for 5-10 minutes until it becomes frothy.
  2. Mix the dough: In a large mixing bowl, combine the flour and salt. Gradually add the activated yeast mixture and olive oil, stirring with a wooden spoon until the dough comes together.
  3. Knead the dough: Transfer the dough to a floured surface and knead for about 8-10 minutes until it’s smooth and elastic. If the dough feels sticky, sprinkle a bit more flour as needed.
  4. Let it rise: Place the dough in a lightly oiled bowl and cover with a clean towel. Allow it to rise in a warm spot for 1-1.5 hours, or until it has doubled in size.
  5. Shape the bread: Punch down the dough and shape it into a round or oval loaf. Place it on a baking sheet dusted with cornmeal.
  6. Second rise: Cover the shaped dough with the towel and let it rise again for 30-45 minutes.
  7. Bake: Preheat your oven to 425°F (220°C). Bake the bread for 25-30 minutes, or until it’s golden brown and sounds hollow when tapped on the bottom.
  8. Cool: Allow the bread to cool on a wire rack for at least 15 minutes before slicing.

Notes

For an extra-crispy crust, place a small oven-safe dish of water on the bottom rack while baking to create steam. Experiment with adding herbs like rosemary or thyme for a unique twist.
