  • 2 boneless, skinless chicken breasts, cooked and shredded or diced
  • 4 cups low-sodium chicken broth
  • 3 fresh jalapeños, diced finely
  • 3 cloves garlic, minced
  • 1 medium onion, diced small
  • 8 ounces cream cheese, room temperature
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the bacon in a large soup pot over medium heat until crispy. Remove and set aside, leaving about 2 tablespoons of bacon grease in the pot.
  2. Sauté the diced onions and jalapeños in the bacon grease over medium heat until softened, about 5 minutes. Stir in the garlic and cook for another minute.
  3. Add the shredded chicken to the pot and cook for 2-3 minutes to let it soak up the flavors.
  4. Pour in the chicken broth and bring to a simmer. Let it cook for 10 minutes to meld the flavors.
  5. Lower the heat and whisk in the cream cheese until fully melted and smooth. Stir in the heavy cream and simmer for another 5 minutes.
  6. Gradually stir in the shredded cheddar cheese until melted. Sprinkle in the smoked paprika, garlic powder, salt, and pepper. Adjust seasoning to taste.
  7. Crumble the cooked bacon and stir it into the soup, saving a bit for garnish if desired.
  8. Ladle the soup into bowls and top with extra bacon, shredded cheese, or sliced jalapeños for garnish. Serve hot and enjoy!

Notes

Adjust the spice level by removing jalapeño seeds and membranes. Use freshly shredded cheese for better melting. Save bacon fat for sautéing vegetables to enhance flavor.
