This irresistible layered burrito casserole is the ultimate comfort food for Tex-Mex lovers. Packed with bold flavors, it’s perfect for family dinners, potlucks, or satisfying your Tex-Mex cravings.

Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 1 packet taco seasoning (or homemade blend)
  • 1 can refried beans (16 oz)
  • 1 cup salsa (mild, medium, or hot)
  • 68 flour tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 1 cup sour cream
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup green onions, thinly sliced (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook the ground beef and onions until browned. Drain excess grease, then stir in taco seasoning and 1/4 cup of water. Simmer for 2-3 minutes.
  3. In a bowl, combine the refried beans and salsa until smooth.
  4. Grease a 9×13-inch baking dish. Start layering: spread a thin layer of the bean mixture on the bottom, place a tortilla on top, followed by a layer of seasoned beef, and sprinkle shredded cheese generously. Repeat layers until all ingredients are used, ending with cheese on the top layer.
  5. Cover the dish with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  6. Let the casserole cool slightly, then top with sour cream, olives, and green onions.
  7. Slice into squares and serve warm.

Notes

[‘Ensure your salsa isn’t too watery to prevent soggy layers.’, ‘Distribute cheese evenly to bind layers and add a gooey texture.’, ‘Adjust taco seasoning and salsa heat to suit your taste.’, ‘You can assemble the casserole ahead of time and refrigerate it until ready to bake. Add 5-10 minutes to the baking time if refrigerated.’]
