  • 2 medium-sized ripe bananas, mashed
  • 1/2 cup unsalted peanut butter (ensure it doesn’t contain xylitol)
  • 2 cups oat flour
  • 1 large egg
  • 24 tablespoons water

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
  3. Add the peanut butter and egg to the mashed bananas, stirring until well combined.
  4. Gradually mix in the oat flour, one cup at a time, until the dough comes together. If the dough feels too dry, add 1-2 tablespoons of water at a time until it’s pliable but not sticky.
  5. Lightly flour your work surface and roll the dough to about 1/4-inch thickness.
  6. Use cookie cutters to create fun shapes, or simply cut into squares or strips with a knife.
  7. Arrange the cut-out treats on the lined baking sheet, leaving a little space between each one.
  8. Bake for 20-25 minutes or until the treats are golden brown and firm to the touch.
  9. Allow the treats to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Use ripe bananas for natural sweetness, ensure peanut butter is free of xylitol, and adjust dough consistency with water or oat flour as needed.
