A gourmet twist on the classic grilled cheese sandwich, featuring melty mozzarella, vibrant pesto, and crispy golden bread for a quick and delicious dinner option.

Ingredients

  • Thick slices of sourdough or rustic white bread
  • Mozzarella or provolone cheese
  • Pesto (homemade or store-bought)
  • Unsalted butter, softened
  • Optional: sliced tomatoes, arugula, or red pepper flakes

Instructions

  1. Slice your bread into thick pieces. Spread softened butter evenly on one side of each slice. On the unbuttered side, spread a generous layer of pesto.
  2. Place the cheese on top of the pesto layer. If adding extras like sliced tomatoes or arugula, layer them on top of the cheese. Top with the second slice of bread, buttered side facing out.
  3. Place your skillet or griddle over medium-low heat and let it warm up for a couple of minutes.
  4. Place the sandwich in the skillet and cook for about 3-4 minutes on each side, pressing gently with the spatula to ensure even browning. The bread should be golden and crispy, and the cheese should be melted.
  5. Carefully flip the sandwich once the first side is golden. If the skillet gets too hot, lower the heat slightly to avoid burning the bread.
  6. Remove the sandwich from the skillet, let it rest for 1-2 minutes, and slice in half. Serve immediately for the best gooey texture!

Notes

For extra flavor, try experimenting with flavored breads like garlic ciabatta or rosemary focaccia. Cover the skillet with a lid for a minute or two to help the cheese melt faster.
