  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • ½ cup (115g) melted butter
  • 1 teaspoon vanilla extract
  • 1 cup (240g) drained crushed pineapple
  • ½ cup (50g) sweetened shredded coconut
  • ½ cup (120ml) coconut milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, whisk together the sugar, eggs, melted butter, and vanilla extract.
  4. Fold in the crushed pineapple and shredded coconut into the wet mixture.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk. Mix until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack.
