  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese, softened
  • 1 cup chicken broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until softened, about 3-4 minutes. Stir in minced garlic and cook for an additional minute.
  3. Add the ground beef to the skillet and cook until browned, breaking it up with a wooden spoon. Season with salt and pepper to taste.
  4. Stir in the can of Rotel diced tomatoes with green chilies and let it simmer for 2-3 minutes to meld the flavors.
  5. Lower the heat to medium-low and add the chicken broth, cream cheese, and shredded cheddar cheese. Stir until the cheese is melted and the sauce is creamy.
  6. Add the cooked pasta to the skillet and toss to coat evenly in the sauce. Let it simmer for 2 minutes to allow the flavors to soak in.
  7. Taste the pasta and adjust the seasoning as needed. Add more salt, pepper, or even a pinch of cayenne if you like extra spice.
