Ingredients

  • Sweet onions (Vidalia or other sweet varieties), sliced into rings
  • Unsalted butter, melted
  • Mayonnaise
  • Shredded cheese (mozzarella and Parmesan)
  • Ritz crackers, crushed
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice sweet onions into 1/4-inch thick rings and separate them into individual rings.
  3. Arrange the onion rings evenly in a 9×13-inch baking dish.
  4. In a mixing bowl, combine melted butter, mayonnaise, shredded cheese, and crushed Ritz crackers. Stir until well combined.
  5. Sprinkle salt and pepper over the onions before spreading the cheesy topping mixture evenly over them.
  6. Bake uncovered for 25-30 minutes, or until the top is golden brown and bubbly.
  7. Let the dish cool for 5 minutes before serving.
