  • 1 lb ground beef, 80/20 blend
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon vegetable oil or canola oil
  • 8 small soft flour tortillas or corn tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded sharp cheddar cheese
  • 1 small red onion, thinly sliced
  • Optional: sliced pickles or jalapeños
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon apple cider vinegar
  • Salt and pepper, to taste

Instructions

  1. Prepare the Special Sauce: In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, smoked paprika, garlic powder, and apple cider vinegar. Season with salt and pepper to taste. Refrigerate while cooking burgers.
  2. Preheat skillet or griddle over medium-high heat until very hot (around 400°F). Add vegetable oil and let shimmer.
  3. Divide ground beef into 8 equal portions and loosely roll into balls.
  4. Place 2-3 beef balls on the hot skillet. Using a sturdy spatula, press each ball down firmly to about ¼-inch thickness. Hold for 10 seconds. Season with salt and pepper.
  5. Cook patties without moving for 2-3 minutes until edges are crispy. Flip and cook another 1-2 minutes. Add shredded cheese immediately after flipping to melt.
  6. Warm tortillas in a dry skillet or microwave wrapped in a damp towel until soft.
  7. Assemble tacos by spreading special sauce on each tortilla, then layering shredded lettuce, a smashed burger patty, sliced red onion, optional pickles or jalapeños, and shredded cheddar cheese.
  8. Serve immediately while patties are hot and crispy.

Notes

Use a hot skillet for best crust formation. Do not press patties after flipping to keep them juicy. Warm tortillas while cooking patties to serve immediately. For gluten-free, use almond flour tortillas or lettuce wraps. For dairy-free, substitute cheese and mayo with plant-based alternatives.
