  • 1 1/2 cups (180g) old-fashioned rolled oats
  • 1 cup (125g) all-purpose flour
  • 3/4 cup (150g) brown sugar, packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted (or use dairy-free butter for a vegan option)
  • 1 cup (240ml) fresh lemon juice (about 45 lemons)
  • 1 tablespoon lemon zest
  • 1/2 cup (100g) granulated sugar
  • 3 large eggs
  • 1/4 cup (30g) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine the oats, flour, brown sugar, baking powder, and salt. Pour in the melted butter and mix until the mixture resembles coarse crumbs.
  3. Press about 2/3 of the crumble mixture into the bottom of the prepared pan, forming an even layer. Save the remaining 1/3 for the topping.
  4. In another bowl, whisk together the lemon juice, lemon zest, sugar, eggs, and flour until smooth. The filling should be slightly thickened.
  5. Pour the lemon filling over the crust, spreading it evenly with a spatula. Sprinkle the reserved crumble mixture on top.
  6. Bake for 30-35 minutes, or until the top is golden and the filling is set. The filling should no longer jiggle in the center.
  7. Let the bars cool completely in the pan before lifting them out using the parchment paper. Slice into squares or rectangles and enjoy!
