  • 4 large russet potatoes, baked and diced
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth (low-sodium preferred)
  • 2 cups whole milk
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 6 strips bacon, cooked and crumbled
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Bake the potatoes: Bake 4 large russet potatoes at 400°F (200°C) for about 45 minutes or until tender. Let them cool slightly, then dice into small cubes.
  2. Sauté the onion & garlic: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for 3-4 minutes, until translucent. Stir in the minced garlic and cook for another minute.
  3. Create the base: Sprinkle the flour over the onion mixture, stirring constantly to form a paste. Cook for 1-2 minutes to remove the raw flour taste.
  4. Add the liquid: Slowly pour in the chicken broth while whisking to prevent lumps. Add the milk and stir well. Bring the mixture to a gentle simmer.
  5. Add the potatoes: Stir in the diced baked potatoes and let them simmer for 10-15 minutes, until soft and the soup starts to thicken.
  6. Blend (optional): If you prefer a creamy texture, use an immersion blender to partially blend the soup, leaving some chunks for texture.
  7. Finish with flavor: Stir in the sour cream and shredded cheddar cheese. Season with salt and pepper to taste.
  8. Serve & garnish: Ladle the soup into bowls and top with crumbled bacon, extra shredded cheese, green onions, and a dollop of sour cream.

Notes

Bake the potatoes for authentic flavor. Adjust the texture by blending partially or leaving it chunky. Avoid boiling after adding milk to prevent curdling.
