  • 1 lb lean ground beef
  • 2 cups diced russet potatoes
  • 1 cup finely diced carrots
  • 1 cup finely diced celery
  • 1 cup finely chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup diced pickles for garnish
  • Salt and pepper to taste
  • Optional: 1 tsp paprika
  • Optional: Hot sauce to taste
  • Optional: Chopped parsley for garnish

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving about 1 tablespoon of bacon grease in the pot.
  2. Add diced onion, carrots, celery, and garlic to the pot. Cook for 4–5 minutes, stirring occasionally, until softened and fragrant.
  3. Push the veggies to one side and add the ground beef. Cook until browned, breaking it up with a wooden spoon. Season with salt and pepper.
  4. Stir in the potatoes and pour in the chicken broth. Bring to a boil, then reduce heat to simmer for 15–20 minutes, or until the potatoes are fork-tender.
  5. Stir in the heavy cream and shredded cheddar cheese. Keep stirring until the cheese is melted and the soup is creamy.
  6. Taste and adjust with more salt, pepper, or hot sauce if desired.
  7. Ladle the soup into bowls and top with crispy bacon, diced pickles, and extra shredded cheese if desired.

Notes

Grating your own cheddar cheese will melt smoother than pre-shredded cheese. Let the soup simmer to ensure the flavors meld beautifully. Customize garnishes with jalapeños, sour cream, or crushed tortilla chips for extra flair.
