  • 1 lb (450 g) ground beef (80/20, grass-fed preferred)
  • 32 oz (900 g) frozen tater tots
  • 2 cups (200 g) shredded cheddar cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 10.5 oz (298 ml) condensed cream of mushroom soup
  • 1 cup (240 ml) sour cream
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • ¼ cup (25 g) chopped green onions (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes, breaking it apart with a spatula until no longer pink. Drain excess fat if needed.
  3. Add chopped onion and minced garlic to the beef. Cook for another 3-4 minutes until softened and fragrant.
  4. In a mixing bowl, combine the condensed cream of mushroom soup, sour cream, Worcestershire sauce, salt, and pepper. Stir until smooth.
  5. Add the cooked beef, onions, and garlic to the bowl. Stir well to coat everything evenly.
  6. Pour the beef mixture into a 9×13-inch baking dish, spreading it out evenly. Sprinkle shredded cheddar cheese all over the top.
  7. Arrange the frozen tater tots in a single layer on top of the cheese.
  8. Bake uncovered for 35-40 minutes until the tots are golden brown and crispy and the cheese is bubbling. If tots brown too quickly, loosely tent with foil for the last 10 minutes.
  9. Garnish with chopped green onions if desired.
  10. Let the casserole rest for 5 minutes before serving.

Notes

Drain excess beef fat to prevent sogginess. Use frozen tater tots straight from the bag for best crispiness. Let casserole rest 5 minutes before serving. For extra crispiness, broil 1-2 minutes at the end but watch carefully to avoid burning. Can be made ahead and refrigerated overnight before baking. Freeze unbaked casserole for up to 2 months.
