  • 1 cup (220g) light brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1 1/2 cups peeled and diced apples (use a firm variety like Granny Smith)
  • 1/4 cup (60ml) pure maple syrup
  • 2 tablespoons unsalted butter
  • 1/2 cup (60g) powdered sugar, sifted
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving a slight overhang for easy removal.
  2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, and mix until fully incorporated.
  3. In a separate bowl, sift together the flour, baking powder, salt, and cinnamon. Gradually fold the dry mixture into the wet mixture using a spatula. Stir just until combined.
  4. Gently fold the diced apples into the batter, ensuring they’re evenly distributed.
  5. Pour the batter into the prepared pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  6. Allow the blondies to cool in the pan for about 15 minutes, then transfer them to a wire rack to cool completely.
  7. In a small saucepan over medium heat, combine the maple syrup and butter. Stir until the butter melts and the mixture begins to bubble. Remove from heat, whisk in the powdered sugar and vanilla, and let it cool slightly.
  8. Drizzle the maple glaze over the cooled blondies. Use a spatula or spoon to spread it evenly.
  9. Cut the blondies into squares and serve.

Notes

For cleaner cuts, refrigerate the blondies for 30 minutes before slicing. If the glaze is too thick, add a splash of milk to thin it out. If it’s too runny, whisk in more powdered sugar.
