  • 1 1/2 cups (300g) granulated sugar
  • 1 teaspoon baking soda

  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups ripe bananas, mashed (about 3 medium bananas)
  • 1 cup (240ml) crushed pineapple, drained
  • 1 cup (100g) chopped pecans or walnuts (optional)
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon until well combined.
  3. In another bowl, beat eggs and vegetable oil until smooth. Stir in vanilla extract, mashed bananas, and crushed pineapple.
  4. Gradually fold the wet mixture into the dry ingredients with a spatula until just combined. Avoid overmixing.
  5. Fold in chopped nuts if using.
  6. Divide batter evenly into prepared pans and smooth the tops.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Let cakes cool in pans for 10 minutes, then turn out onto a cooling rack to cool completely.
  9. Beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar, vanilla extract, and salt, beating until fluffy.
  10. Place one cake layer on a serving plate, spread a generous layer of frosting, then top with the second cake layer. Frost the top and sides evenly.
  11. Chill the cake in the refrigerator for 20-30 minutes to set the frosting before slicing (optional).

Use room temperature ingredients for best results. Avoid overmixing the batter to keep the cake tender. Drain pineapple well to prevent soggy batter. For smoother frosting, sift powdered sugar and beat cream cheese and butter thoroughly. Chill cake before slicing for cleaner cuts. For gluten-free, substitute flour with gluten-free blend.
