Ingredients

  • Fresh strawberries, washed and thoroughly dried (choose firm, medium-sized berries for best stacking)
  • Good-quality dark chocolate (at least 60% cocoa), such as Ghirardelli or Lindt
  • White chocolate (optional, for drizzling and decorative contrast)
  • Toothpicks or skewers (to help secure the tower layers)
  • Mini marshmallows or edible gold leaf (optional, for garnish and extra wow-factor)
  • Cooking spray or parchment paper (to prevent sticking during assembly)

Instructions

  1. Gently rinse strawberries under cold water and pat dry completely with paper towels. Any moisture will cause the chocolate to seize, so this step is key. (About 10 minutes)
  2. Set up your double boiler by simmering water in a saucepan and placing a heatproof bowl on top. Add chopped dark chocolate and stir occasionally until smooth (about 5-7 minutes). Alternatively, microwave in 30-second bursts stirring in between to avoid burning.
  3. Holding a strawberry by the stem or using a skewer, dip it into the melted chocolate, swirling to coat evenly. Let the excess drip off. Place the dipped berry on parchment paper or a baking sheet. Repeat with all berries. (15 minutes)
  4. Transfer the dipped strawberries to the fridge for about 15 minutes, allowing the chocolate to harden. This makes stacking easier and less messy.
  5. Using the same method as step 2, melt the white chocolate for drizzling. Pour into a piping bag or plastic zip bag, snip a tiny corner, and drizzle artfully over the cooled chocolate strawberries.
  6. On a clean platter, arrange the strawberries in a circular base. Use toothpicks or skewers to secure layers as you build upward, working carefully to balance the tower. Add mini marshmallows or edible gold leaf for a festive touch if desired.
  7. Pop the entire tower in the fridge for 10 minutes to help everything firm up and hold together.
