  • 2 cups cooked turkey, shredded or chopped
  • 2 cups stuffing, homemade or store-bought
  • 1 cup dried cranberries
  • 2 large eggs
  • 1 cup bread crumbs (regular or panko, gluten-free if needed)
  • 1/2 cup chicken or turkey stock
  • 1/2 cup onions, finely diced
  • 1/2 cup celery, diced
  • 2 tablespoons butter, melted
  • 1 teaspoon sage (fresh or dried)
  • 1 teaspoon thyme (fresh or dried)
  • 1 tablespoon parsley (fresh or dried)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. In a skillet, melt the butter over medium heat. Add the diced onions and celery, cooking until softened, about 5 minutes. Stir occasionally to avoid burning.
  3. In a large mixing bowl, combine the cooked turkey, stuffing, dried cranberries, sautéed onions and celery, bread crumbs, and herbs. Mix well to combine.
  4. Beat the eggs in a separate small bowl, then pour them into the mixture along with the chicken or turkey stock. Mix until everything is evenly combined. The mixture should hold together when formed into balls—if it’s too dry, add a little more stock.
  5. Using your hands or a cookie scoop, form the mixture into balls about 1.5 inches in diameter. Place them on the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake in the preheated oven for 20-25 minutes, or until the stuffing balls are golden brown and firm to the touch.
  7. Allow the stuffing balls to cool for 5-10 minutes before serving.
