A stunning galaxy-themed mirror glaze cake inspired by the Leo constellation, perfect for special occasions with a rich, tender vanilla cake and a glossy, shimmering glaze.

  • 1 ¾ cups (220g) all-purpose flour, sifted
  • 2 tsp (8g) baking powder
  • ½ tsp (3g) salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • ¾ cup (180ml) whole milk, room temperature
  • 1 tsp vanilla bean paste (optional)
  • 3 gelatin sheets (about 7g) or 2 ½ tsp powdered gelatin
  • 1 cup (200g) granulated sugar (for glaze)
  • ¾ cup (210g) sweetened condensed milk
  • ½ cup (120ml) water
  • 7 oz (200g) white chocolate, chopped finely
  • Food coloring gels: navy blue, purple, black, and edible gold dust
  • 2 oz (55g) white chocolate, melted for piping
  • Edible silver or white pearl dust (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract and vanilla bean paste if using.
  5. With mixer on low, add dry ingredients in three additions, alternating with milk, beginning and ending with flour. Mix just until combined.
  6. Divide batter evenly into prepared pans and smooth tops.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. Soak gelatin sheets in cold water for 5 minutes or sprinkle powdered gelatin over ¼ cup cold water. Set aside.
  10. In a saucepan, combine sugar, water, and sweetened condensed milk. Heat gently until sugar dissolves and mixture is hot but not boiling.
  11. Remove from heat, squeeze excess water from gelatin sheets and stir into hot mixture until dissolved.
  12. Place chopped white chocolate in a large bowl. Pour hot mixture over chocolate and let sit for 2 minutes. Stir gently until smooth and glossy.
  13. Divide glaze into small bowls and tint with gel colors: navy blue, purple, black. Add edible gold dust to one bowl for shimmer. Layer or swirl colors carefully in a large bowl for pouring.
  14. Let glaze cool to about 90°F (32°C), it should coat the back of a spoon and flow slowly.
  15. Level cake layers if needed. Place one layer on a wire rack over a baking tray. Pour glaze generously over cake, letting it drip evenly down sides. Let excess drip off before transferring to serving plate.
  16. Melt 2 oz white chocolate and fill a piping bag with a fine tip. Pipe the Leo constellation stars and connecting lines onto the glazed cake. Dust stars lightly with edible pearl dust if desired.
  17. Refrigerate cake for at least 1 hour to set glaze fully before serving.

Notes

Use high-quality white chocolate finely chopped for smooth glaze. Bloom gelatin properly to avoid lumps. Pour glaze at about 90°F (32°C) for best results. Strain glaze to remove bubbles. Practice piping constellation on parchment paper first. Keep cake cold before glazing to help set glaze quickly. If glaze thickens, gently warm it to make pourable again.
