  • Wooden or metal skewers (soaked in water if wooden to prevent burning)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika (optional)
  • 2 tablespoons chopped fresh parsley
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Lobster Tails: Using kitchen scissors, carefully cut through the top shell of each lobster tail lengthwise, stopping just before the tail fin. Gently pry the meat out and lay it on top of the shell, keeping it attached at the base.
  2. Skewer the Lobster: Thread each prepared lobster tail onto a skewer lengthwise. If using wooden skewers, soak them beforehand to avoid burning.
  3. Make the Garlic Butter Glaze: In a heat-resistant bowl, melt the butter over low heat. Stir in minced garlic, lemon juice, smoked paprika, parsley, salt, and pepper. Adjust seasoning to taste.
  4. Preheat the Grill: Heat your grill to medium-high (about 400°F / 200°C). Oil the grates lightly to prevent sticking.
  5. Grill the Lobster Skewers: Place the skewers shell-side down on the grill. Brush the exposed lobster meat generously with the garlic butter glaze. Grill for about 5-6 minutes, then flip the skewers and baste the meat again. Continue grilling for another 4-5 minutes or until the lobster is opaque and slightly firm to the touch.
  6. Final Baste and Serve: Give the lobster tails one last generous brush of garlic butter before removing from the grill. Let them rest for a couple of minutes. Serve hot with lemon wedges on the side.

Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning. Keep the grill temperature steady at medium-high (about 400°F). Baste lobster tails frequently with garlic butter to keep them moist and flavorful. Avoid overcooking to prevent rubbery texture. If no grill is available, use a grill pan or broiler and baste often. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently in a low oven wrapped in foil.
